I am not sure why but I am endlessly interested in new breakfast ideas. Every time I read a food blog I immediately click on their “breakfast” category and start searching for new ideas. I do the same thing with magazines, but all too often it’s just another take on pancakes, muffins, or french toast.
I’m also all about having a high protein breakfast on the cheap. That means eggs. But eggs can get old fast when all you eat is scrambled eggs every day. So I am always up for new ways to serve these nutritional gems.
Pair all of that with the fact that we have been eating a lot of corn tortillas since moving to Texas. These little bread-substitutes have made our stove-top meals complete on a very, very frequent basis.
Not only is this meal a nice change from the ordinary eggs and bacon that we eat a lot of around here, but it is also fairly cheap. Eggs are an excellent food, when coming from healthy chickens, and can fill you up without having to eat a huge breakfast.
And, last but certainly not least in my world, this entire breakfast is made with one skillet despite the fact that you are cooking or warming three separate things.
Breakfast Tacos
Recipe note: These are extremely versatile and can involve just about any ingredient you might have on hand. You could use beans or chili in place of the meat. You could use cheddar, American, or jack cheese depending on your preference. You could even use whatever type of tortillas you might have on hand in place of corn. Use the recipe as a guide.
serves 4
Ingredients
- 8-10 corn tortillas
- 8-10 eggs
- 8 slices of bacon or equivalent breakfast meat
- shredded or sliced cheese
- salsa or hot sauce as desired
Directions
- Warm your tortillas in a medium-hot cast-iron skillet for 15 seconds, flip and cook another 15 seconds or until warm and toasty but not burned. Repeat with the rest of the tortillas, stack, and cover plate with a clean towel.
- In the same skillet fry your bacon or breakfast meat and set aside.
- In the same hot skillet with a bit of the bacon or sausage drippings left into the pan fry the eggs to desired yolk consistency. Or, if you prefer, scramble them in a bowl first and cook. Frying the eggs prevents the little bits of scrambled eggs from falling all over the place, though
. - Assemble your tacos by placing a warm tortilla on the plate, top with cheese, hot egg, and bacon. Add salsa or hot sauce as desired and serve. We like to add a little fresh fruit on the side if it is available.



Yes! We love the breakfast taco/burrito here. It’s been a breakfast staple ever since we gave up breakfast cereal. Sometimes I’ll toss in some chopped-and-fried baked potato from dinner the night before. Warmed up in the same skillet in a little of the bacon or sausage grease. I love sour cream and fresh pico de gallo on mine. My son takes more kindly to the burrito program if there’s ketchup to be had.

YUM! We do this a lot. Being a Texas native, we eat a lot of tortillas. Now that we are GF we eat a lot of corn tortillas. In fact tortillas have always been preferred over bread. If using store bought corn tortillas, quickly run a handful under running water (or dip them into a bowl of water if you don’t have running water
) shake out excess water, and fry in a skillet…using just a little bit of oil, or lard. This will make corn tortillas super soft, yum, and roll well into burritos, enchiladas, etc. We normally do scrambled eggs with a diced onion and a few chopped fresh jalapenos, sauteed just a bit before adding the eggs.

Now that looks good! My toddler wanted me to make them. When I told him we didn’t have any bacon, he responded with we could make some. I told him it might take awhile!!

We love breakfast tacos, used to live in Texas and miss them. I do make them here, but it is nice – or would be nice – to have them at restaurants. One restaurant we go to has a $5 breakfast meal that includes coffee, and you get an egg your choice of prep, your choice of breakfast meats, choice of homestyle potatoes or grits and your choice of breads. I turn that into breakfast tacos by asking for tortillas (not on list) for bread, homestyle potatoes, scrambled egg, and bacon. I remove the fat from the bacon. I then make breakfast tacos with that. Unfortunately, they don’t serve salsa.
This would be great with a little creme fraiche and cilantro!!!
